A random stranger might need help, only to turn out to be a villain. You could be attacked by bandits while traveling, or worse, a Deathclaw.
You could stumble upon NPCs being attacked by a Deathclaw. You could be approached by a member of a faction that starts a long side quest.
The world is also dynamic and NPCs and factions will treat you differently based on your reputation, and certain events may only happen if you’ve completed prerequisite quests.
3 Grand Theft Auto V

I feel like GTA V is as wide as an ocean but as deep as a pond – once you complete the main storyline, there’s not much to do aside from mess around in the chaotic Rockstar sandbox.
However, one exception to this is the random encounters, which present themselves as Freaks and Strangers missions.
There are random hitchhikers to be picked up, or criminals needing a quick escape. There are also plenty of unique encounters, like meeting a cultist or driving an unsuspecting hitchhiker to a cult.
Introductions to “side quests” often come in the form of stumbling across an NPC who needs help – like a certain photographer trying to get the best photo.
